To make cream from milk, you will need to follow these steps: Start with fresh, whole milk. The higher the fat content of the milk, the more cream you will be able to obtain. If possible, use raw milk or unhomogenized milk for the best results. Allow the milk to sit in the fridge for several hours, or overnight. This will allow the cream to rise to the top of the milk. Skim off the cream from the top of the milk using a spoon or a fine-mesh strainer. Be careful not to skim off too much of the milk, as you will need some milk to mix with the cream. Pour the cream into a clean, dry container with a tight-fitting lid. Make sure the container is large enough to allow room for the cream to expand. If you want to make whipped cream, add a sweetener of your choice, such as sugar or honey, and whip the cream until it forms stiff peaks. You can also add vanilla extract or other flavourings to enhance the taste. If you want to make butter, continue to whip the cream until the fat separates from the liquid. This will take several minutes of continuous whipping. Once the fat has separated, strain off the liquid (this is called buttermilk) and rinse the butter with cold water to remove any remaining liquid.
